Ingredients for 4 people:

  • 12 oz package of Despaña Traditional Chorizo
  • 8 medium potatoes
  • 5 eggs
  • Olive oil
  • Salt
  • Paprika (optional)
Peel the potatoes and cut length wise into fries. Heat enough olive oil to cover the potatoes half way in a large frying pan on medium heat. Salt the potatoes and fry them in the pan until they are soft when pierced and golden brown. Remove them with a spatula and put them onto a paper towel lined platter to drain. Save the oil in the pan to cook the chorizo and eggs next.

 

While the potatoes are frying, cut the chorizo into ¼ inches slices. Fry in the same oil that the potatoes were cooked in. Place them on the platter altogether with the fries.

 

Fry the eggs with olive oil, season with salt and paprika.

 

Arrange fries and sliced chorizo on a large serving platter. Top with fried eggs, pierce the yolks or slice the eggs to mix within the dish.

 

We suggest to eat this plate with bread so you can spread the yolks.
